The failure points do not: data, integrations, configuration, training, and cutover break in the same order whether you are moving to Mews, Cloudbeds, Apaleo, Stayntouch, or Guestline. Anywhere a step is specific to one platform, it says so.
Do not hand this to your vendor. Most of it is not their job, and the items that are theirs still need you to verify them. Print it, walk it phase by phase with your project owner, and put a name and a date against every item you cannot tick today.
If more than a quarter of the items in the first three phases are unchecked and you already have a go live date, the date is the problem, not the list. Move it before someone else does it for you in week six.
